Meal Prep Recipe: Traeger Hot Sauce Chicken

As I mentioned in our meal prep post, we use our Traeger a lot especially chicken dishes. It gives the food a subtle smoky flavor and keeps everything very moist which is crucial when you’re reheating meals throughout the week! This recipe is our favorite.

Begin by establishing a smoke in the Traeger with the lid open then preheat to 450 degrees for 10-15 minutes.

50 ounces thawed chicken thighs. We use the frozen chicken thighs from Costco.

*We like thighs much better than breasts but you can use breasts if you like.

Season one side of the chicken using any desired seasoning.

**We like this Urban Accents Heartland Pepper & Garlic seasoning and Weber Roasted Garlic & Herb seasoning.

Put the chicken on the Traeger and cook for 10 minutes.

While the chicken is cooking, simmer together 1 cup Frank’s Red Hot Sauce and 4 tablespoons butter in a saucepan.

***We haven’t tried it, but I’m sure you can use another type or oil or fat in place of butter. (Ghee, lard, coconut oil, etc)

Dip the chicken into the hot sauce/butter combo and return to the Traeger for 8-10 minutes or until the internal temperature reaches 165 degrees Fahrenheit.

Once the chicken is done, let rest for a few minutes then cut into slices, and portion how you’d like!

We typically portion out ten 5 ounce containers that have approximately 25 grams of protein per serving. This allows us to either have 5 ounces as a quick snack or 10 ounces for a larger meal and get 50 grams of protein.
****For a crispier finish, we seared the chicken for 2 1/2 minutes on each side using our gas grill set to high.
